How can I disable my Kotak Neo UPI id?

You can go to account details page -> UPI settings and click on disable UPI id for disabling Kotak Neo UPI. If you wish to register it again, you can go to UPI settings on account details page or select Kotak Neo UPI payment method on Funds page.
